Super-deelish Hemp Balls

These little guys might not look like much, but they will pick you up from the floor in the afternoon, dust you off and kick you right back to racing !!  Super delicious and packed with nutritional goodness, perhaps one might not be enough!

Prep Time - just 10 minutes!!

What you need:

1 cup Dates, pitted - soaked in boiling water 5-8 minutes

1/2 cup almond (or other nut) butter

1/4 cup Hemp Seeds (hulled)  - + 3 Tbspns for Rolling

2 Tspn vanilla

2 Tbspn Cacao Powder or unsweetened Cocoa Powder 

2 Tbspn coconut oil, melted

1/2 Tspn salt

1/2 cup dried cranberries (or blueberries, dried)

1/4 cup mini dark chocolate chips

What to do:

1. Drain the softened dates and transfer the water to a glass jar - you can use this yummy date sweetened water to add to smoothies or sweet drinks - will last in fridge for 3-4 days (waste not, want not :-) )

2. Place dates, almond (or nut) butter and vanilla in your food processor and blend on medium setting until a sticky consistency (dough-like) forms.  It's perfectly fine and normal to have to stop the processor and scrape the sides down with a spatula during this process.  Add the Hulled Hemp seeds, cacao (or cocoa), coconut oil & salt and blend until well incorporated.

3. Add your dried cranberries (or blueberries) and blend once more until combined.

4. Roll into balls of around 3cm round (or whatever size you prefer) and coat in preserved Hulled Hemp Seeds, coconut or cocoa (whatever you prefer!).

Place onto a cookie sheet and place into fridge for at least an hour - works best if left over night (try and wait lol)

Keep stored in an airtight container - they will keep in your fridge for up to 3 weeks, but we think they'll be gone much quicker than that!
